**Q: After reading the reviews I ordered a bag!  I'm trying to duplicate the paella I had in Spain -- what is your best cooking secret?  Muchas Gracias!**
A: The secret for paella... Don't be stingy with the saffron, use plenty!

**Q: Do you cover the pan while the rice cooks in your paella pan?**
A: NO, do not cover it!!!  You also do not stir it!  Give the pan a shake every once in a while.  The recipe that I usually use has you take the pan off the heat when the rice is cooked and cover it with a clean dish towel for 5-10 minutes.

**Q: Can this rice be used for other rice dishes?**
A: I don't see why not. It is a short grain rice perfect for forming the "soffrito" at the bottom of the paella pan. But it is rice, after all.

**Q: Has anyone compared this Santo Tomas bomba rice to the considerably less expensive Matiz bomba rice also sold on amazon?**
A: Doubt there would be much difference.

Authentic Spanish rice for paella is virtually impossible to find here. Instead of driving 1 hour+ each way to San Diego and buy it at a Spanish specialties store, I ordered it and it arrived overnight. The quality of the product is excellent, it was fresh and it cooked evenly. I highly recommend it and I will definitively buy it again!

Amazing.. Authentic and perfect.. yes you're paying a premium price for the rice, but the level of detail and authentic nature as well as how this cooks is more than worth paying a few more quid. I was blown away at the end result and my guests loved the end result. Purchased another sack the same day to keep ready for next time.
