What is the Japanese grade? Please don't say "pro grade," as there are several grades and the price should reflect the grade.

Not sure about the Japanese grade try searching for "Which binchotan grade is right for me?".  Based on those guides here is information that will help.  This "pro grade" binchotan is solid and smooth round planks approx 2-3 cm in diameter and between 10 to 14 cm in length per piece.  There are very few splits in the length of the coal and it is very dense so the quality is decent.  It takes sustained very high temperatures to get this binchotan going because of its density and length.  The lower and 'Select' grades will probably ignite faster and easier so that is important to consider if you do not want to have to use a gas torch or air blower to get high enough heat to get your binchotan ready.   When lit the coal burns very hot and clean.  Due to the high effort to ignite and cost I only use this binchotan to cook foods that cost more per pound than the charcoal itself ;-) but the results are worth it.  Hope that helps!
