Is this silicone baking mat dishwasher safe?

To this question, I can only say "yes" is quite safe. You can bake them in the oven, and the dishwasher is nowhere near the maximum baking temperature. As stated in the ad: temperatures from -40°F to 500°F（-40℃ to 260℃). I have no problem putting my liner in the dishwasher even on the bottom.

Can the mats be trimmed/cut? They are about one inch wider than my cookie sheet.

Not safe to cut. From several manufacturers of silicon mats: Silicone baking mats usually have a layer of fiberglass sandwiched between the top and bottom silicone layers. The fiberglass weaving is perfectly safe as long as it stays sealed in silicone. However, when someone attempts to cut the mat, they risk getting fiberglass in anything they cook on it after.

Can these be used on stoneware?

I don't see why not but then again I know every little about stoneware.

Silicon baking sheets

Haven’t used the product yet, although it appears as expected so I’m certain it will be fine. The large sheets are slightly wider than I anticipated and slightly shorter so they don’t quite fit my baking sheets as I expected but again I’m certain they’ll be just fine!

These mats are just ok they don't cover the cookie sheets so you lose space when baking and you have to spray mats with oil food sticks to them pretty bad

Cooking crackers made easy!

I use the cookie sheet for spreading sourdough discard on for making crackers in the oven! Before I used parchment paper which works but the dough sticks and wrinkles the paper while spreading. Glad I bought them!
