**Q: is the item vegetarian? I couldn't read the ingredients list**
A: The ingredients on the label are listed as being:  'Organically produced wheat flour, Flour treatment Agent (E300) Ascorbic Acid'.  That's it.  I take the E300 Ascorbic Acid as being vitamin C.  It also states on the label 'Not recommended for use with white flours  unless they contain heavy ingredients such as cheese, nuts, seeds etc..........Best used with wholegrain flours.'.   I bake wholemeal bread using this product and can recommend it; no more loaves that are as dense as bricks.  I am also a vegan.

**Q: Is it vegan?**
A: I would think so. Here is the ingredient list: Organically produced WHEAT flour [with calcium, iron, niacin, thiamin], flour treatment agent (E300), ascorbic acid.
Allergen information is in UPPERCASE.

I've used it for years. A tablespoon in the bread machine helps the bread to rise and be light. I think the key ingredient would be the ascorbic acid (Vitamin C). Hope that helps.

**Q: Can you use this instead of yeast?**
A: I really don’t know, l’ve only used it with wholemeal or oat flour with yeast, it helps heavy flours rise better.

**Q: Can it be used with sourdough bread?**
A: I haven't used it with sourdough bread but I don't see why it wouldn't work. I bake with organic stone ground flour which can be a bit heavy, which is the reason I use the dough improver to lighten it.

It may be a bit counter productive to use dough improver with sourdough as, after all, you are looking for a natural rise with sourdough.
