The green, unroasted coffee is immersed in warm water to open up the pores. The green coffee is then put into a pressurized tank with liquid carbon dioxide. The Co2 circulates through the coffee, drawing out the caffeine. The coffee is then put in an evaporator where the caffeine is separated from the Co2. After evaporation, the Co2 is re-condensed and the process repeated until the desired amount of caffeine is removed. The coffee is then discharged into a drier where it is dried to achieve its original moisture content. The coffee is now ready for roasting.
