Can I use a powerbank to power the transmitter?

Thank you for choosing IOGEAR. It is not recommended but as long as the powerbank you choose outputs the proper voltage and amperage it technically should work.

What is the amount of latency? Will it work for iMag, Games playing, or to transmit a live camera?

IOGEAR says : The Latency is around 200ms . This is not recommended for IMAG or Game playing . As long as the camera had a direct HDMI connection to the transmitter this kit will transmit a live camera feed. For Virtually no Latency please check out the GW4K30GH60. Thank you for choosing IOGEAR

how do you connect to a windows 10 PC?

If your intention is to send the signal (wirelessly) from a PC to a TV (or projector), you would need to have an HDMI output on the PC. The transmitter (from this kit) would be connected to the HDMI output on the PC. The receiver (from this kit) would then be connected to an HDMI input on the TV. The signal is sent wirelessly from one location to the other and then converted to usable HD (at the TV).

Does anyone make a wireless kit for turntables yet?

There are several Bluetooth Turntables on the market. I don't think there would be a need for HDMI wireless for audio equipment because HDMI is used mostly for computers and tv to transmit data, video, and audio together.
