I’m a pilot and going to use these for flying but can I also use them on Microsoft Flight Simulator if I connect them via Bluetooth to my computer?

These should be useable by Bluetooth with your computer, but please be aware that there may be audio latency when playing games with them over Bluetooth.

Has anyone ran into the problem of using the dual plug GA style headset only to find that the microphone plug isn’t long enough?is there a adptr?

Never used the function. It’s likely you can find an extender cable from Bose, EBay, Walmart, Best Buy, Amazon etc. They are a common item
