If this has a recorder surely it should play the recording back.

It's not a recorder. It checks electrical changes and temperature fluctuations x

Can you set the temperature display to Deg. Celcius?

My unit is showing four dashes and NO temperature, any one know how to get the numeric readings back on the display?

Does this come with an instruction manual for people who are completely new to all this?

It does come with instructions. It will take a little practice to learn how to use it to its full advantage.
