Good question - honestly I don't know how the primer will react to that much heat, but if I was painting headers, disk calipers, etc I would be using XHT (Extremely High Temperature) paints specifically designed for that type of situation. They are available on Amazon.

can I spray acrylic paint over this without reaction

I would say yes as acrylic will not activate the paint again.

Would this help an epoxy glue to bond to a stainless steel/galvanised surface?

I think that only roughing or scoring the surface would be the only way you could help epoxy glue to adhere to a metal surface
