A: I received one of each

**Q: What temperature is the rinse supposed to be?**
A: Water temp should be above 100F with pH less than 10 or 75F with pH less than 8 if a chlorine sanitizer solution at 50-99 ppm is in use. Regular store brand bleach (generic Clorox) is acceptable to most health inspectors. It is not much, just a splash. Inexpensive test strips are available from most restaurant suppliers and all commercial food suppliers and should be used which takes out all the guess work. Test strips is something our health inspector looks for when he makes his visit. Heat sanitizing requires greater than 171F for 30 seconds which is only practical for commercial dishwasher machines.
