For washing camping dishes- Will one do the trick, or do you really need two of these for wash and rinse basins?

Depends on your setup and how many dishes you use/have. For us (5 people) we use the 3 bin system. Wash, rinse, and sterilize but could probably get away with 2. They work great and fold up nicely.

How is this for doing dishes while camping?

This is the reason I bought was for camping and it works great. It’s sturdy and room enough for pots n pans. Def recommend it

Most CG’s do have a separate area for washing dishes and we have only needed one of the flex ware basins...your mileage may vary!
