I do soak them in hot water from anywhere to 5 mins to 30 mins depending on how hungry I am. the thickness is not an issue. You can get about 3 servings on a plank. there are some knots that fall out creating some holes in the plank, but not been a problem. If I had a wish for these planks, I wish they were at least 15 inches long to use for whole salmon fillets.
