They add a nice crunch and interesting flavor to the energy snack. If they also provide some healing properties so much the better. I really do seem to have more energy when I eat one the snack balls and all my innards are working great with the good dose of fiber provided. I first crunch up the kernels in the food processor alone, then add raisins, dates, dried cherries or cranberries and chocolate chips for the decadent factor :). I zap the combination until it chops well and blends. The resulting sticky wad can be rolled into individual balls slightly smaller than a golf ball. I dust them lightly with powdered sugar and wrap them individually in shrink wrap. The recipe also called for shredded coconut, but I didn't have any so skipped that and am happy with the result without it. In the end I have a convenient and tasty energy snack with lots of healthy properties. I can pop one in my purse when I go out or grab one at home for a pick-me-up between chores. Sometimes one provides a quick breakfast with a cup of coffee.
