How do I know that it is organic and pure?** A: I’m hoping that Jiva does batch testing for toxic soil impurities and pesticides. The US does not inspect supposed organics that come into the country. The only state that does is Calif., and it happens once a year. **Q: What is the approximate volume of 5g of the powder?** A: 3 1/2 tsp **Q: What is the ratio to substitute for fresh ginger? e.g. how much powder to use if recipe calls for 1tbsp grated fresh ginger.** A: I am not sure. I use this powder ginger mixed in a drink I make for inflamation. It is very smooth and mixes well. I don't get that very strong taste you get with regular ginger. It is a nice size jar. I paid for this product with my own money and I am giving my honest opinion about the product and the retailer. I reached out to the seller as well as several other here on Amazon for lab testing results on their products. I got several replies with less than impressive results. This seller's results were so close to zero it may as well be zero. The number of things tested for was 5 pages long! The results beat the other "organic" products hands down. The others had higher amounts of cadmium, lead, arsenic, and chromium. All four of these were tested for and the the results are impressive compared to all the others. I saved it as a PDF file and I don't know how to take a screen shot of it otherwise I would put it on here for all to see. I got the package today and opened it. This is a 16 oz container, there is a nice seal under the lid. It is a plastic squarish bottle. The ginger smells fresh, I tasted it, and it has a peppery bite like ginger should. It's not super hot, but it is hot. I guess I've had hotter ginger but the problem is, is that hotter ginger loaded with heavy metals and chemicals. I don't know, and I'm tired of emailing people who seem reluctant to provide lab testing results when asked for them. These days with pollution everywhere, I do not think anyone can get a completely pure product. The trick is to get the least amount of them as one can possibly get. I use ginger daily, so very low levels of contaminants is a must for me. Everything considered I am very happy with the company, the lab results and the ginger. So I am giving this product five stars for: value for money, very very low amounts of contaminants. Freshness, and the polite, and fast response of the retailer to my request for the lab results.
