How do we know if this is the original product? Amazon allows sellers who sell “not matching original products”.?!

It has the same scent and consistency of the products I purchased in stores. I assume it’s the same.

Why does it take so long to ship?

Depends on when you order, how many others have ordered. Could order 2 day express, but pay the price.

the first line of the ingredient list is" sodium c14-16 olefin sulfonate" please explain, it's most likely not a sulfate-free shampoo, am i right?

Based on chemistry, no. sulfonates are salts of sulfonic acids, which aren't directly related to sulfates. the only similarity is that they both contain sulphur. So, in answer to your question, it is sulphate free.
