Can this adapter let me plug a USB mic into an XLR mixing board?

I'm sure you can, but you'd probably need another a usb adapter, if your mic is a female usb, then you'll need a male to male adapter chord, assuming that the XLR on this adapter is male.

Does the +48V button act as a power switch? Does it have to be "on" to pass signal through? (I already have phantom power supply in the audio chain)

No, it doesn't act as a power switch. It is only for running a condenser mic. It can be left off. However, if you are feeding 48v as input to this unit, when it is designed to have only the signal as input, I do not know what the effects will be. I imagine that it is best to operate the 48v boost at the last device before the mic, if even your mic needs the boost at all.

What does the "monitor" dial do?

It controls the mix level of the headphone out without affecting the gain or mic volume .

Most of the answers say this is for low impedence mics. i'm looking for a way to connect the wireless audio2000s mic system to my computer. will i have any problems if i'm using a macbook pro and the mic receiver has an output of what appears to be 600 ohms?

Couldn't say for sure, but impedance seems to be much less of a concern with the mic circuitry in use lately. If there's a preamp in your mic's receiver, you wouldn't need this unit. It's not merely an adapter. It's a preamp. If you do need a preamp, just get the right patch cord to match the output jack of your wireless receiver to the X2U's female XLR jack & you should be good to go.
