Will these shoes be good on cobblestones?

Yes absolutely. They are a very comfortable walking shoe on multiple surfaces.

Are these slip resistant?

You may want to contact the company with this question. I am not an expert in these shoes. All I know is they are very comfortable and I have not slipped in them.

Do the soles come out so you can put in orthotics?

I've never tried to pull the inner sole out. I have a pair of orthotics for arch support, but I don't need them in these shoes. They already conform to my natural arch and support it.
