To the seller - is this a creality oem product or a knock off? thank you.

I'm pretty sure Creality doesn't make a dual-Z axis kit for the Ender 3 series, so it's not even a knockoff. It's just an aftermarket upgrade.

I have the ender 3 v2 but the wiring with this kit doesn't appear to fit the motherboard's existing z power port. what am i doing wrong?

The splice needs to connect to the other z motor, NOT directly to the mainboard. So you will still use stock wiring with the additional splice.

Will this work on the CR-10 mini? If not, which product would work?

It can be used, but the screw rod will exceed the top of z-axis top, so it doesn't look beautiful.

Will the brackets work for the Ender 3 Pro Meanwell (thin) power supply?

Yes they are the same brackets for all Enders
