Mine doesn’t taste sour, but it is a bit bitter , raw cocao, as opposed to sweetened and processed cocoa often used in baking so perhaps that’s what the difference is.

Alkalized cocoa is washed in potassium to get the ph to a neutral 7, so..... no, this brand's cocoa is not alkalized and would be a ph of around 5.

Is it made from criollo beans, and have the 3oo nutrients including anadamide and phenylethylamine?

Our certified organic cacao in this product is sourced from Peru, which cultivates mainly Trinitario, Forastero and Criollo cacao varieties, but we do not specify a single cultivar so it can be any or all of those. We don’t ID or quantify those two specific components in our organic cacao powder.
